So my favorite cold-pressed juice company, Lumi, makes this amazing juice - Upbeet Pear. I love it so much I wanted to recreate it by virtue of a creamy, delicious, nutrient-dense smoothie. Success! I know it sounds weird, but the jalapeño gives this such a fantastic zing. Give this bright smoothie a try! If you want to make this into a post-workout smoothie, replace the coconut milk with coconut water or almond milk (something with less fat).
- 1/2 cup beet juice
- 1/2 cup coconut milk (or coconut water or almond milk)
- 1/2 jalapeño, seeds removed
- 1 pear, diced
- 1/2 lemon, juiced
- 1 scoop vanilla protein powder (SFH Pure is my fave)
- 1/2 tsp vanilla extract
- 6-8 ice cubes
- Place all ingredients in a blender and whiz up until creamy!
- Sip and enjoy.
