Slow Cooker Buffalo Chicken Chili

All hail chili season! It's about 40 degrees here in Charlotte, meaning the streets are filled with...no one. And the grocery stores are filled with...everyone. Because any temperature below 50 warrants apocalyptic shopping tendencies. "What? It's sweater weather? Guess I should go purchase 14 gallons of milk and all the wonder bread that Harris Teeter has in stock." 

Hyperbole aside, it's getting quite cold in the Queen City. I mean, sure, we're not throwing steaming hot buckets of water into the air and watching it turn to snow before our eyes (one of my favorite pastimes growing up "north of the Wall" in Chiberia), but it's alllllll relative, my friends. 40 is COLD for a southern city, and having lived here for so long, it certainly feels cold me to me now too. My first winter in the south felt more like "winter". As in a fake winter. As in an "awww this is a precious attempt at winter" type of winter. As in I scoffed at - even looked down upon - anyone who thought anything in the 40s wasn't tee shirt weather. Yeah...that ended rul quick. I can't even pretend to be tough anymore. I'm pretty sure I pulled my sweaters and boots out of storage this year in September.... 

Anyways, whether you're dramatically bundling yourself up in fuzzy hats and mittens to brave the oh-so-miserable 40 degree weather, or you're shoveling snow in the actual cold, ERR'ONE enjoys a nice seasonal bowl of hearty chili. With that, I invite you to dust off your crock pot and warm up with this bowl of flavorful nourishment. Beware of the buffalo kick! If you love buff-chick-anything, you'll really enjoy this special twist on one of winter's favorite comfort foods. 

Ingredients

  • 1 lb ground chicken
  • 1 (14.5 oz) can coconut milk
  • 2 cups bone broth
  • 1 (14.5 oz) can diced tomatoes
  • 1/2 cup Frank's Hot Sauce
  • 2 celery stalks, chopped
  • 1 cup shredded carrots
  • 1 yellow onion, diced
  • 1 bell pepper, diced
  • 1 tsp paprika
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1/2 tsp cayenne pepper
  • Optional: 2 tbsp Flavor God Ranch Seasoning
  • Paleo Ranch to garnish

Method

  1. Place all ingredients in your slow cooker, except for the paleo ranch.
  2. Set the slow cooker to LOW for 8 hours or HIGH for 4.
  3. Enjoy! Garnish with some ranch for a special treat.
