Creamy Balsamic Dressing

This dressing is the mother of all dressings. I haven't made anything OTHER than this dressing for any of my salads since I created this stupidly simple masterpiece. It seriously makes the salad. On that salad note, stay tuned for a follow up recipe that features this delectable creamy magic sauce (you guessed it...it's a salad...you're a genius, congratulations).

After having a totally non-paleo creamy balsamic dressing at a restaurant recently, I made it my mission to make one that a) is clean and not loaded with canola oil, sugar, etc. and b) tasted even better than the restaurant version. #nailed it. What makes it creamy might you ask? Mayonnaise (paleo mayo, duh). This stuff rocks your socks off. And if we're calling a spade a spade, this is pretty much mayo with balsamic vinegar and a few other minor items mixed into it. But whatever, I'll continue to tout myself as a salad dressing pioneer. Who know mayo was so versatile?! Stupid question. It's America's favorite condiment...everyone knows it's versatile.

Ingredients

  • One batch paleo mayonnaise (use regular salt instead of white truffle...this recipe is also great)
  • 2 tbsp balsamic vinegar
  • 2 tsp minced garlic
  • 1 tbsp lemon juice
  • Optional: 1-2 tbsp water

Method

  1. Whisk all ingredients together or blend (I use an immersion blender).
  2. Store in an airtight container in the fridge for up to a week.

Yield: ~1 cup dressing
