This minimal ingredient recipe was pretty popular on my Instagram account, so I thought I'd sneak it onto the website too. Honestly, this isn't the most revolutionary recipe, as I've seen several recipes just like it - but it is certainly one of my favorites and a super healthy alternative to sugar-loaded, empty carb-filled pancakes. Try 'em out! You won't be disappointed!
- 1 banana, mashed
- 2 eggs
- 1 tsp coconut flour
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- Cooking fat of choice
- Mash your banana in a bowl and whisk in eggs, coconut flour, vanilla and cinnamon.
- In a non-stick skillet over medium heat, melt your cooking fat (I use coconut oil spray, but coconut oil, ghee, butter, etc. will work just fine).
- Pour in 1/4 of the batter into the skillet and cook for 2-3 minutes per side. Repeat until yo use up all the batter.
- Top with whatever you like! My favorite is a heaping scoop of sun butter.
