For Taco Tuesday! And for any other day you feel pineapple mango salsa is imperative. Love this stuff. The ingredients are simple and you just mix 'em all up in a single bowl. Easy peasy! Now...about the spice factor. You can scale the level of heat to your preference...it's just a matter of how you prepare the jalapeno. SO, if you don't want it too spicy, just slice the pepper in half and cut out all the seeds. But if you do like the heat, then go ahead and mince it up as is. I left the seeds in...partially because I like the spice (and because I'm not a total pansy), and partially because I was lazy and had no interest in meticulously removing each seed.
Ready. Set. Go.
- 1 cup fresh pineapple, finely diced
- 1/2 cup fresh mango, finely diced
- 1 cucumber, cored and finely diced
- 1 jalapeno, minced
- 1/4 red onion, minced
- Juice of 1 lime
- 2 tbsp olive oil
- 1/4 cup fresh basil, chopped
- Sea salt to taste
- Toss everything together in a bowl. Boom.
