Today's post directs you to one of my favorite paleo bloggers - Steph Gaudreau of Stupid Easy Paleo. She doesn't know me by any stretch of the imagination...I really just follow the shiz out of her Instagram handle and website (commenting here and there obviously)...so dedicating a blog post to her entirety probably comes off as kind of creepy, but whatever...she's the bomb [instagram bomb emoticon here]. This post came to fruition simply due to my belief that some recipes are meant to be shared with the world...and this is one of them. Her Sweet and Savory Blueberry Tortilla is a stroke of genius. I know I have it under the "Breakfast" tab, but it is truly one of my favorite "anytime" meals. I, myself, almost always have these ingredients on hand. Not to mention its easy as F to put together. Oftentimes when I get ravenous, I start to lose brain function, babble a non-comprehensive version of English and scratch my head for ideas as to what I can stuff my face with before I resort to throwing pots and pans and eating raw eggs (I know...I'm so...primal). Blueberry Tortilla to the rescue just in time before I start foaming at the mouth! Cute, Finley...cute.
As she says, "blueberries and eggs were meant to be together." These crepe-like egg tortillas have a really savory flavor (mostly thanks to the coconut aminos) paired with the fresh, sweet taste of blueberries...it's fantastic. - large spoonful of ghee or coconut oil
- 4 eggs
- 1 tbsp coconut aminos
- 1 tsp cinnamon
- 1/4 tsp black pepper
- 1/2 cup blueberries
