Chocolate Glazed Nutella Donuts

I impulsively bought a donut pan recently. Most girls online shop for clothes and accessories...I online shop for things like donut pans, zucchini noodlers and paleo cereal. #FatJoke. Well I also online shop for clothes, but we won't get into that...I'll just say my online shopping tendencies can be out of control and leave it at that.

I strongly uphold no decent kitchen should be without a donut pan...probably an egregious statement but I stand by it. When it arrived I realized I now weild the dangerous power of donut accessibility at all times. So what to do with this mystical object? Oh, uh...make donuts. Ok, fine, donut god...have your way...I'll make some damn donuts. Since I pretty much find any excuse (and I mean any excuse) to bake for "special occassions", I deemed my froworker's (friend/co-worker) return to work from her honeymoon in Jamaica the perfect reason. Sorry, April. I meant to bring in a few more...but they got lost somewhere. In my belly.

I realize this may not be the most popular post...since most people don't online shop for donut pans, but you could also just put the batter in muffin tins and make a delicious, moist (moiissttt) donut cupcake!

For the donuts

  • 3/4 cup hazelnut meal
  • 1/4 cup unsweetened apple sauce
  • 2 eggs
  • 2 tbsp raw honey
  • 2 tbsp coconut oil, melted
  • 2 tbsp cocoa powder
  • 1/4 tsp sea salt
  • 1/4 cup Enjoy Life chocolate chips

For the glaze

  • 1/4 cup Enjoy Life chocolate chips
  • 1 tbsp coconut oil

  1. Preheat oven to 350.
  2. Combine all donut ingredients in a mixing bowl. Pour batter into a greased donut pan, or into a muffin tin lined with 6 cupcake liners.
  3. Bake for 15 minutes or until a toothpick comes out clean. Let cool in pan and then carefully transfer to drying rack.
  4. While donuts are cooling, in a microwave-safe bowl, melt chocolate chips and coconut oil on 25 second increments until completely melted.
  5. Once donuts are completely cool, drizzle the glaze on top. Eat with coffee. Eat with salad. Eat as hamburger bun. Eat.
