Say whaa? Bacon AND meat? Together?!?!?!?! Ok, I guess it's not that revolutionary, but it still excites me. For some reason, the 12 year old boy in me (yes, boy) comes out whenever meatballs are a topic of discussion. It just makes me snicker, which is highly inappropriate and immature on my part. But whatever. So if you smirk and think of a dirty joke at any point throughout this post...just know I already thought of it and then scold yourself for being such a perve.
Pretty jazzed about these meatballs to be completely honest. More so, I'm mad that I had to share them with my brother. Though this recipe yields plenty of balls for everyone, I could have eaten them all myself. Being the best sister in the whole entire world can be really taxing.
Serve these glorious meaty balls over zoodles or spaghetti squash with some marinara or pesto and you're golden. If you're not paleo, you can serve these over spaghetti or whatever else you want. Serve them over cereal for all I care, they'd still rock. Gross, actually don't do that.
- 4 strips of bacon
- 1 lb ground beef
- 1/4 red onion, diced
- 1 egg
- 1/4 tsp paprika
- 1/4 tsp onion powder
- 1/4 tsp cayenne
- 1/4 tsp cumin
Preheat oven to 350.
- In a skillet, cook your bacon strips to crispy. Remove to drain on a paper towel then crumble up when cooled.
- In a mixing bowl, combine beef, onion, egg and spices. Add bacon crumbles. Mix well.
- Roll mixture into 2 inch balls and place on parchment paper-line baking sheet. Place in the oven for 12-14 minutes.
- Serve over zoodles or spaghetti squash with some clean marinara!
Servings: 3-4 (makes 15-20 meatballs)
