Gingerbread Coffee Creamer

Competing with peppermint for most favored winter holiday flavor, I felt it was only fair to provide a Gingerbread flavor for paleo-fied coffee creamer since I already gave some love to the peppermint coffee craze here. You can use this delicious concoction in small quantities as a creamer with your standard brewed coffee, but I've also found it makes for an amazing latte milk with espresso. It's versatile - do whatcha want with it! 

"NOT MY BUTTONS! NOT MY GUM DROP BUTTONS!" - Gingey, the most adorable gingerbread man cookie from Shrek. Props if you got the analogy prior to reading the description.

Ingredients

  • 1 can full-fat coconut milk
  • 2 tbsp grass-fed butter
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1 tbsp honey
  • 1/2 tbsp unsulphured molasses 

Method 

  1. In a saucepan over medium/high heat, add all ingredients. Whisk thoroughly until combined.
  2. Store in an airtight container in the fridge for up to one week.
