Competing with peppermint for most favored winter holiday flavor, I felt it was only fair to provide a Gingerbread flavor for paleo-fied coffee creamer since I already gave some love to the peppermint coffee craze here. You can use this delicious concoction in small quantities as a creamer with your standard brewed coffee, but I've also found it makes for an amazing latte milk with espresso. It's versatile - do whatcha want with it!

- 1 can full-fat coconut milk
- 2 tbsp grass-fed butter
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/4 tsp ground cloves
- 1 tbsp honey
- 1/2 tbsp unsulphured molasses
- In a saucepan over medium/high heat, add all ingredients. Whisk thoroughly until combined.
- Store in an airtight container in the fridge for up to one week.
