Crispy flatbread under shredded chicken, buffalo sauce, ranch and sharp cheddar is just an unreal combination. This recipe is perfect for a night where you just want to kick your feet up, have a glass of wine and be a lil' naughty. Beware, there will be several buffalo chicken themed recipes in the coming months because it's my current flavor obsession.
You know how everyone in the paleo/primal world is essentially married to the spaghetti squash meat sauce combination? I swear whenever I scroll through Instagram (which is more times a day than I care to admit), I'm hit with at least 3 food porn snaps of some deliciously saucey looking spaghetti squash platter. That is where the inspiration for this recipe derives. Spaghetti squash and meat sauce is pretty much a deconstructed version on this delightful pizza boat.
The ginormous zucchini are best for making boats, as suggested by my wise mother - so first tip is to go for the larger than average zuke here. If you're looking for a super low carb pizza...here it is. This is a DELICIOUS recipe at any time of day. I most often eat it at breakfast just because I like saying I had pizza for breakfast. Paleo pizza crusts can be incredible. But unfortunately they are more of a "every once in a while" type of thing for me, just because they are typically made with a whole bunch of almond flour or something along those lines. And while one slice is totally kosher...I sometimes lack the self control to not eat the entire pie and then I end up consuming like 2 cups of almond flour in one sitting. No bueno.
