This is way easier to make than it probably sounds. I just felt like I needed to pander to the blogging world and give this bowl of simplicity an uppity name. I've been eating this for breakfast, lunch and dinner because it's so damn delicious at any time of day.
You know that light, lemony, delicious pasta salad that you're likely to find at a friendly barbecue or summer get together? Orzo, pine nuts, finely chopped veggies and other delicious nuggets are typically in attendance and you're likely to get seconds. Ok - well my girlfriend's boyfriend is like a master chef. No seriously...he lights that shi* up in the kitchen. He's pretty awesome...and his last name sounds like "butts"...which is hilarious to my immature, twenty-four-year-old self and makes him that much cooler. He brought this wicked little dish to our cozy Super Bowl watch party and I immediately sought to recreate it, post it and give him full credit. I literally had nothing to do with this - it was just too brilliant a use of cauliflower rice NOT to share.
Though I wouldn't ordinarily consider lemon tarts your prototypical birthday treat...these sure didn't disappoint my man friend on his big day. To digress, he's one of those weirdos who when given the choice between fruit-based desserts and chocolate-based desserts, he will 11 times out of 10 (math was never my thing) choose the fruit. And because chocolate cake should be the only type of cake that exists in this world, I was left with the option of a fruit-based birthday trizeat.
