Planting 5 basil plants may have been a little aggressive. After Landon and I decided to up our "adulthood" this summer, we spent what felt like 7 hours on a Sunday at a gardening center to try our hand in the domestic sport. Neither of us know jack about gardening, but it seems to be working in our favor so far, because our herbs are freakin' prolific. At some point during our haj to the gardening mecca of Lowe's, we convinced ourselves that we needed a shit ton of basil. I'm a fan of pesto, putting it in green smoothies, sprinkling it over Italian dishes, etc...so 5 sounded like the right number.
I'm not sure why cod used to freak me out...because it's delicious. Especially weird because I love seafood. I feel like the word "cod" just sounded blehhh. Regardless, I love it now, and have been playing around with different ways to cook with it. This ginger soy recipe has been my favorite way to do it by far. If you're on #teamwhiterice, it's particularly delicious served atop a broccoli white rice stir fry. OR you can try it with my fried cauli rice from this recipe for a grain free, low carb option.
Anything that takes me less than 5 minutes to make, I'm sold. This delicious number has made it into my weekly meal routine because it takes me - you guessed it - three minutes in total to throw together and "cook" (let's take the word "cook" lightly...pretty sure a color blind sloth would have no issues throwing this together).
Having just arrived home from a week in Las Vegas, I've been due for a clean, homemade meal. Whether you're in Sin City for work or play, I assure you, one week is plenty of time for either. I was there on business; however, after very long days of hard work, cutting loose with my friends and colleagues in the evening was a welcome change of pace. In particular, Sunday in Vegas was a Funday indeed.
Taco Tuesday, am I right??? Of course I'm right. My paleo tortillas fit the bill for Taco Tuesday...and Taco Monday, Wednesday, Thursday, etc. I just love a good taco, and I hadn't had fish tacos in quite some time. And something about spicy garlic tilapia just felt right. It had to be done. If you don't like fish tacos, that sucks for you. But you could just simply take the tortilla recipe and make whatever taco your little mexican-inspired heart desires.
