The f**k is jackfruit? Well I just used it in a recipe and I still don't really know what it is, but I saw it as a featured new product in Trader Joe's so I grabbed a can of it. The nice, bearded hipster working at trusty ol' TJ's told me that jackfruit isn't actually sweet or fruity, and that it's often used in vegan cooking as a meat replacement. He then suggested I try it for a meat-free Taco Tuesday.
Happy Valentines Day, you filthy animals! I neither know nor care about what your plans are on this Hallmark holiday, but I'm hoping it at least entails sugar. Who's to say you can't ogle your blue eyed honey (or dog) AND a tasty treat on this polarizing day? Some of you reading this might LIVE for the V-Day cheese, while others might prefer taking temporary residency in stretchy pants watching some below average Josh Duhamel flick through the bottom of a bottle of vodka.
Remember those little cups of ooey gooey caramel that would conveniently be placed RIGHT by the apples in the produce section of the grocery store? Hilarious placement, actually..."yes, let's place this load of sugary crap right in front of the fruit and totally derail the choices of all the healthy schmucks that come through our store...muahahahah." It's like putting a sewage system next to a playground. Might as well toss a bowl of spaghetti squash with Hershey's chocolate sauce and M&Ms (....light bulb!).
You know that Mocha Cocoa Dry Rub I posted a while back? If not, check it out because it's awesome. Turns out I was totally making it into a one trick pony by only using in with ribeye. It just so happens to also be an amazeballs rub on chuck or rump roast and thrown into the slow cooker.
What a cute, mini delightful treat these are! And ridiculously easy. I mean...I won't sugar coat it...I may or may not have been slightly tipsy when making these, so you know they've got to be an easy fix. Before you go and judge, I'll let you know that I had JUST come home from a girls brunch in which the bottomless mimosa prevailed...and sent me home wanting a treat. I had a fridge containing medjool dates and coconut milk and a pantry stocked with dark chocolate chips and nuts....so chocolate turtles it was.
Something about these bars makes me want to dance around the kitchen in my undies and watch a happy movie....like Love Actually. Man I love that movie. This recipe was developed on a whim. I was getting ready to leave to visit my parents for the weekend and decided I should come with a dessert in hand (because what kind of worthless, free loading daughter would show up to her parents' house empty handed? I would NEVER do that...ermm...cough).
