I am a ginormous supporter of incorporating collagen into our daily diets. Collagen is the basic building block of our skin, nails, tendons, bones, and joints. It's basically everywhere in the human body. Collagen peptides are a fabulous dietary supplement, as they provide our bodies with the amino acids necessary to produce new collagen...which, at the risk of nerding out too hard on the subject, is basically important for most (if not all) day-to-day human functions.
Oh yes. Come to momma you sweet, sweet cup of delicious whipped chocolate peanut butter magic.Similar to my recent rant about allowing oats back in my diet, I've also come to re-extend a friendly handshake to quality yogurt sources. Greek yogurt is my fave. I particularly stray towards Trader Joe's plain Greek yogurt, as it has a whopping 22g of protein in a cup and is super versatile - whatever flavor I'm in the mood for, I just dress it up accordingly. Drizzle it with some honey and sliced fruit? Great. Add it to a smoothie for extra creaminess? Nailed it. Whisk it with peanut butter and cocoa powder for the most simple yet mind blowing moussey cookie dough-like treat? Witchcraft.
Seriously, stuff this thing with whatever the hell you want. I personally chose to use the Lovebean Fudge's Chocolate Hazelnut spread...simply because it's drool-worthy and I didn't want to go through the hassle of making my own fudge, but the opportunities for cookie stuffing are endless. If you have the time, I might recommend using my Paleo Nutella or even my Mint Chocolate Frosting! Or you can be lazy like me and use the Lovebean Fudge. Either way, this cookie shan't disappoint you.
Trail mix can be a great snack. Sadly, most of the "healthy" trail mix you'll find in the stores are loaded with totally unnecessary ingredients. On the outside, it looks like a cluster of almonds, walnuts, cranberries, etc....simple, right? Wrong. On the inside it leads off with stuff like "high fructose corn syrup" and "hydrogenated" whatever or "soy lecithin" garbage. I throw my hands up and scream "WHYYY!!!!" Why ruin the already magical and natural taste of nuts, seeds and other trail mix goodies by injecting the bag with all that junk?! I'll never understand, I suppose.
Holy cookie amazingness. Though hard to compare to the magnitude of, say, a bacon chocolate chip cookie (simply because how do you compare anything to bacon + chocolate??)...this cookie is easily one of my proudest creations. I know I have a lot of chocolate chip cookie variations, but that's only because everyone loves a chocolate chip cookie and I'm just trying to give the people what they want. And what they want is cookies. Lots and lots of cookies. This particular cookie is crispy on the outside and soft on the inside - my favorite cookie consistency. If you're weird about walnuts, you can omit them and just have an outstanding basic CCC.
For a less traditional dessert, I have a little quesadilla action for ya. Dessert 'dillas! Hooray! The combo of chocolate, banana and sunbutter is a pretty unbeatable combo, so there's really no messing this recipe up.
