The f**k is jackfruit? Well I just used it in a recipe and I still don't really know what it is, but I saw it as a featured new product in Trader Joe's so I grabbed a can of it. The nice, bearded hipster working at trusty ol' TJ's told me that jackfruit isn't actually sweet or fruity, and that it's often used in vegan cooking as a meat replacement. He then suggested I try it for a meat-free Taco Tuesday.
While I'm partial to the vinegar or mustard based style of pulled pork (check out my Carolina BBQ Pulled Pork recipe), when it comes to baby back ribs, I'm alllll about that red sauce. I can easily put down an entire rack of tomato-based bbq slathered ribs in one sitting. No shame.

Take a look at her Quiche Kathleen, Cinnamon Pita Chips or Pecan Crusted Cheesecake and tell me you don't want to lick your screen. She lives in the Windy City - my old stomping grounds - meaning she embraces the sass, sense of humor and wild side a gal needs to thrive in the lively city of Chicago. Needless to say, it seems as though we are cut from the same cloth.
